Dressed-up Carrot Cake

I made this cake in 2015! It feels like so long ago.

Who doesn’t love Carrot Cake?

I made this cake for a coworker’s birthday. It was a bit of a joke because he intensely disliked vegetables. But he loved this cake!

There are two keys to a great carrot cake:

  1. The fillings

    • This one had walnuts, carrots, shaved coconut, and mixed berries. Creating a rich texture is super important.

  2. Moisture

    1. No-one likes a dry carrot cake. Make sure you don’t over-bake it.

The decorations were deceptively simple.

The texture on the side came from holding an icing scraper against the side of the cake while turning it on a turn-table.

Then I pipe more frosting using a star-tip.

The recipe came from Miette bakery in San Francisco.
